Ricotta Pasta with Spinach and Mushrooms

I had some left over roasted chicken and decided to have that for dinner tonight. Now the tricky part was finding a yummy side dish to go with it. I really wanted to make a quick and easy pasta dish and add in some healthy baby spinach and mushrooms.
