Spicy Chicken Biscuits for Tailgating

We’re heading to FedEx Field to cheer on our Washington Redskins and I wanted to make something easy to eat, crowd friendly, and super delicious. Since it’s a 1:00 game, we’ll probably start our tailgating festivities bright and early; what better way to kick off a day of football and fun than spicy chicken biscuits! I love the chicken biscuits from Chick-fil-A, so here’s my attempt to recreate it at home!

Biscuit Ingredients:

Serving Size: 9 biscuits
Cook Time: 20 minutes

3 cups all purpose flour
2 tbsp cane sugar
1 1/2 tbsp baking powder
3/4 tsp salt
12 tbsp cold unsalted butter, cut into small pieces
1 1/2 cups heavy cream
1 1/2 tsp vanilla extract
4 tbsp of melted butter for brushing

Sift the flour, sugar, baking powder, and salt into a large bowl. Toss with a fork to combine. Pour the mixture into a food processor and add in the butter pieces; pulse the mixture several times until the largest pieces of butter are the size of peas. Return the mix back to the large bowl.

Combine the cream and vanilla in separate small bowl. Make a well in the center of the flour and and pour the cream mixture into the well. Mix with a fork until the dough is evenly moistened and just combined. Gently knead by hand five or six times to create a loose ball.

Turn the dough out onto a lightly floured large cutting board and pat it into an 8-inch square, about 3/4 to 1 inch thick. Transfer the dough to a baking sheet lined with parchment paper, cover with plastic and chill for 20 minutes in the refrigerator. While the dough is chilling, preheat the oven to 425ºF and prepare fried chicken tenders below.

Remove the dough from refrigerator. Cut the dough into 9 even squares and spread them about 2 inches apart from each other on the baking sheet. Generously brush the tops with melted butter. Bake until the biscuits are medium golden brown, 18 to 20 minutes. Remove from oven and give a final brushing of butter. Let biscuits cool until they are warm enough to handle.

Spicy Fried Chicken Tenders:

Serving Size: 9
Cook Time: 7 minutes

Ingredients:
1 egg, slightly beaten
1 tablespoon vegetable oil
2 teaspoons of hot sauce
1 cup panko bread crumbs
1 teaspoon cayenne powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
2 1/2 teaspoons salt
1 teaspoon ground black pepper
1/2 teaspoon ground white pepper
9 pieces of chicken tenders
vegetable oil for deep frying

Combine egg, 1 tablespoon of oil and hot sauce and mix well in a shallow bowl. In a separate bowl, mix together the panko bread crumbs, cayenne powder, paprika, garlic powder, onion powder, salt, and both peppers. Dip chicken pieces first into the egg mix and then the panko batter; shake off any excess. Heat oil in deep fryer to 350 degrees. Cook battered chicken tenders for about 7-10 minutes, or until chicken is done.

To assemble the final product, take a buttery warm biscuit, cut it in half and place a chicken tender piece in the middle. Enjoy with your favorite morning beverage!
