Sometimes I’m just in the mood for a quick dessert and really don’t want to pull out my KitchenAid mixer to whip something together. I came across a recipe for s’more cupcakes and tweaked it a little to make one-bite cupcake treats! It seemed easy enough to make and I could already picture myself devouring these bite-size goodies!
7 whole graham crackers
1/4 cup powdered sugar
6 tbsp unsalted butter, melted
2 bars milk chocolate candy, broken into large chunks
12 large marshmallows, cut in half
Preheat oven to 350°F.
Place graham crackers in a food processor and pulse a few times into fine crumbs. In a bowl, combine graham cracker crumbs, powdered sugar and butter, mix well.
Spray the mini muffin pan with non-stick spray. Using a tablespoon, scoop crumb mixture in each cup of your mini muffin pan. Press crumbs to form shallow cups. Bake 4-5 minutes, until edges are bubbling. Remove mini muffin pan from oven; place marshmallow half, cut-side down, into each cup. Return to oven 1-2 minutes or until marshmallows are just slightly softened. While that is the oven, bring a small pot of water to a roaring boil. Using a heat safe bowl, place the chocolate pieces in the bowl, and place over the pot of water to melt. Stir frequently until all the chocolate has melted. Remove the muffin pan from the oven. Generously drizzle the melted chocolate over top each marshmallow cup and allow the entire muffin tin to cool on your cooling rack for about 15 minutes. Carefully remove cups from pan and enjoy!
You can keep these s’more bites in a sealed container in the fridge for a week. But if you’re like my husband, you won’t be able to store any away. These ooey gooey treats are super delicious and the marshmallows just ooze in your mouth mixing with the delicious graham cracker crust and melted chocolate. You’d be surprised how many you can devour in one sitting!
