It’s week 3 of our 30 day Paleo challenge, and I’m starting to see the light at the end of the tunnel. It’s definitely got me being a little more creative to find meals, snacks and dessert I can really enjoy. To satiate my sweet tooth, a few days ago I made some chocolate chip cookies and now I have leftover almond meal and dairy free chocolate chips. So I’m adapting a chocolate donut recipe to make it Paleo friendly. I have a mini donut tin on hand, so I’m making mini donuts, but this recipe works for a regular donut tin too.
- 3/4 cup almond meal
- 1 1/2 tbsp unsweetened cocoa powder
- 1/4 tsp baking soda
- 1/4 cup unsweetened pure organic applesauce
- pinch of sea salt
- 3 farm fresh eggs
- 1 tbsp organic virgin coconut oil
- 3 tbsp raw honey
- 1/4 tsp pure vanilla extract
- 1/4 cup Enjoy Life’s mini chocolate chips
Preheat the oven to 350 degrees.
In a large bowl combine all ingredients and mix well until smooth. I found it was super easy to use a hand whisk, no need to pull out the KitchenAid for this recipe!
Pour even mixtures into sprayed donut tin. Bake for about 15 minutes. Remove and let cook on cooling rack. Enjoy with a delicious cup of coffee for a great morning treat! I am warning you right now, these mini donuts are quite addictive and I may have snacked on about 6 or so before even letting them fully cool.
