Lemongrass Grilled Shrimp

My mother in law makes an amazing marinade that she uses for her pork chops; I like to refer to this sauce as the magic marinade. Luckily for me, she made a big container of the marinade; and since it’s grilling season, I’ve been using the sauce on just about everything to make a super easy meal after a long day at work. For this meal, I had a pound of large tiger shrimp and recreated my own marinade to make a delicious grilled dinner.

Ingredients:
1 lb large tiger shrimp, peeled and deviened
3 tbsp of the marinade (recipe below)

In a large mixing bowl, combine the shrimp and marinade mix. Let the shrimp marinate for about 30 minutes. Cook over a charcoal grill until the shrimp are firm and pink, about 3 minutes on each side. Enjoy with a side of your favorite grilled veggies.

Marinade ingredients:
1/4 cup light brown sugar
3 garlic cloves, minced
2 shallots, minced
1/4 cup finely minced lemongrass
1 tbsp ground black pepper
1 tbsp thick soy sauce
1 tbsp hoisin sauce
2 tbsp fish sauce
3 tbsp sesame oil

In a blender, combine the sugar, garlic, shallots and lemongrass and grind to a fine paste. Add the black pepper, soy sauce, hoisin sauce, fish sauce, sesame oil and mix well. The sauce can be stored in an air tight container in the refrigerator for a few days and works really well on chicken, pork and shrimp!
