I realized that I haven’t pulled out my meat grinder in a few months and it was getting neglected. The last time I tried to make sausage was back in the summer when I made lamb sausage. So having some free time on my hands, I wanted to make some breakfast sausage instead of having to go to the grocery store on the weekends when I’m craving it!
- 2 lbs pork tenderloin, freshly ground
- 2 tsp dried sage
- 2 tsp sea salt
- 1 tsp freshly ground black pepper
- 1/4 tsp dried marjoram
- 1 tbsp brown sugar
- 1/8 tsp crushed red pepper flakes
- 1 pinch ground cloves
In a large bowl, combine all the spices, salt and sugar. Add in the ground pork and using your hands, mix well. Form into 3 large balls and using wax paper, form into a log for easier storage. When ready to use, slice into patties and cook for about 4 minutes, per side.
