Inspired by all the baking and cooking happening on Twitter, I really wanted to make something new and decided I’d give banana bread a try. I’ve been on a banana kick lately anyway, so I just so happen to have some ripe bananas in the house.
Cook Time: 1 hour
4 ripe bananas
1/3 cup unsalted butter, melted
1 cup cane sugar
1 egg, lightly beaten
1 tsp vanilla extract
1 tsp baking soda
pinch of salt
1 1/2 cup all purpose flour
Preheat oven to 350. Cut the bananas into chunks and mash together in a large bowl. Mix in the melted butter and combine thoroughly with the mashed bananas. Mix in the sugar, egg and vanilla extract. Toss in the baking soda and salt and combine well. Fold in the flour.
Pour the mixture into a loaf pan, sprayed with non-stick cooking spray. Bake for 1 hour. Remove from oven and allow to cool on a rack. Turn the loaf pan upside and give a slight shake to easily remove the bread. Slice and serve with some honey butter. The overly ripe bananas infuse the bread with an amazing flavor and keeps the bread extremely moist! To store, wrap in saran wrap and leave in an air tight container.
