I found this chicken recipe on Pinterest, mainly because the picture looked super appetizing, but also I was shocked to see how easy and simple it was! I liked the combination of spices and herbs to kick up a dull chicken dinner, so I really wanted to try it at home. The original recipe calls for chicken breast, but I prefer the tenderness and flavor of dark meat, so feel free to substitute white or dark meat. Also, I allowed the chicken to marinate for a little bit, but you can also just cook it right away as well.

¼ tsp sea salt
¼ tsp freshly ground black pepper
¼ tsp cayenne pepper
¼ tsp smoked paprika
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp dried thyme
4 boneless, skinless chicken thighs
1 tbsp unsalted butter
1 ½ tbsp lime juice
In a small bowl, mix together salt, black pepper, all the spices and herbs. Place chicken pieces in a gallon size Ziploc bag, pour in seasoning mix and shake to evenly coat all the chicken pieces. Allow the chicken to marinate in the fridge for about 30-45 minutes.
Heat the butter in a large heavy skillet over medium heat. Sauté the chicken pieces until golden brown, about 6 minutes on each side. Sprinkle with lime juice right before removing from the skillet. Serve alongside your favorite pasta dish or with a salad.
