It’s been a while since I’ve baked cupcakes and what’s easier and more delicious than chocolate cupcakes? I happen to stumble on a recipe that used Nutella frosting; normally I use my go-to butter cream frosting, but couldn’t pass up a chance to try something new! It seems like Nutella has been quite a trend lately, who doesn’t want that delicious rich hazelnut flavor, especially over chocolate! I think that’s a win win combination!
Yields: dozen cupcakes
Cook Time: 17 minutes
3/4 cup all-purpose flour
3/4 cup cane sugar
1/4 cup good quality Dutch-processed dark cocoa powder
3/4 tsp baking soda
3/4 tsp baking powder
3/4 tsp cornstarch
1/2 tsp fine sea salt
1/3 cup buttermilk
1/4 cup brewed coffee or espresso, hot
3 tbsp vegetable oil
1 egg at room temperature
1 1/2 tsp pure vanilla extract
Preheat oven to 350° F and line a muffin pan with 12 liners.
In the bowl of electric mixer fitted with the paddle attachment, sift all dry ingredients and mix together.
Add all remaining ingredients to bowl with the dry ingredients and mix for 2 minutes on medium speed. Use an ice cream scoop to pour batter into the cupcake liners, fill until slightly less than 1/2 full, the batter will rise.
Bake for 16-19 minutes, or until toothpick comes out clean. Try not to over bake. Remove cupcakes from the pan immediately and place them on a wire rack until completely cool. As the cupcakes cool, prepare the frosting.
Nutella Frosting Ingredients:
1 cup unsalted butter, softened
1 cup powdered sugar
2 tsp pure vanilla extract
3/4 cup premium bittersweet chocolate, melted and allowed to cool slightly
1/3 cup Nutella
1 tbsp milk
pinch of salt
In a bowl of stand mixer fitted with paddle attachment, combine the powdered sugar and butter and beat on low speed for about 1 minute.
Add vanilla, and beat on low speed until well combined. Add the melted and slightly cooled chocolate and beat on medium speed until smooth, about 2 minutes.
Add the Nutella, milk and pinch of salt, and beat on med-high speed for another minute. Fill piping bag with the frosting and generously coat the top of each cupcake. As an optional item, feel free to put sprinkles or confetti to the cupcakes and brace yourself for to be transported to a rich, chocolate serenity!
