Cambodian Lemongrass Grilled Chicken Wings

Sometimes I really do surprise myself when I come up with a super simple and easy dinner! And the best part, my whole family devours it, I’m talking about my husband and my 2 toddlers! Nothing makes me happier than seeing my family enjoy my cooking.

This recipe is normally used for beef skewers, but I adapted it for chicken wings. Especially since my husband and I bought a few pounds from Costco. I loved grilling them, it gave the wings the perfect char and added that extra smokey flavor.

Serving Size: 2-4

Cook Time: 15 minutes

Ingredients:

2 chicken wings

Marinade ingredients:
3 tbsp finely minced lemongrass
2 tbsp finely diced garlic
1 tbsp chopped ginger
1/2 tsp paprika
1/4 tsp turmeric
2 tbsp fish sauce
3 tbsp sugar
1.5 tbsp salt
1/2 cup water

Combine all the marinade ingredients in a small bowl and mix well.

Pour over the wings and massage well. Cover tightly and allow to marinate in the fridge for at least 4 hours, best overnight.

When ready to cook, heat up the grill. Cook the chicken wings around 6-8 minutes per side. Enjoy with a nice bowl of rice, or a refreshing cucumber salad.
